Spare ribs according to the 3-2-1 method

Spare ribs cooked using the 3-2-1 method are perfect for a leisurely afternoon of barbecuing. First, smoke them; then, wrap them up and cook them; and finally, glaze them to achieve that signature sticky finish.

Preparation

  1. Remove the membrane from the bone end of the ribs. Rub your favourite rub all over the ribs. Take your time and get everything ready so you don’t have to rummage around when you’re at the barbecue.

  2. Light the barbecue with the XCelsius BBQ lighter and set it up for indirect heat at around 110 to 120°C. Time to get the barbecue going. Give it plenty of time to stabilise before you carry on.

  3. Add the smoking wood and smoke the ribs for about 3 hours. Keep the lid closed as much as possible. Take it easy and follow the steps at a leisurely pace – that way, barbecuing stays fun.

  4. Coat the ribs in butter, sugar and a dash of apple juice. Put them back on the barbecue for about 2 hours. Make sure everything is ready beforehand; that way, you’ll work faster and more efficiently at the hot barbecue.

  6. Leave to rest briefly, then slice between the bones. Serve immediately. Keep a close eye on the cooking and carry on calmly following the recipe.
