Pigwings on the BBQ

Pigwings are sturdy pork chops that are ideal for slow-cooking on the barbecue. Give them smoke, heat and time, so that the meat becomes beautifully tender whilst retaining its full flavour.

Preparation

  1. Pat the pork wings dry and season them with the rub. Leave the seasoning to soak in for a short while. Take your time and get everything ready so you don’t have to rummage around when you’re at the barbecue.

  2. Light the barbecue with the XCelsius BBQ lighter and set it up for indirect heat at around 110 to 120°C. Time to get the barbecue going. Give it plenty of time to stabilise before you carry on.

  3. If you like, add some smoking wood and place the pig wings in the indirect heat area of the BBQ. Take it easy and follow the steps at a leisurely pace – that way, barbecuing stays fun.

  4. Cook gently until the meat is tender and has taken on a nice colour. Turn it over carefully from time to time. Keep a close eye on it and continue cooking gently, following the recipe.

  5. Brush the pigwings with BBQ sauce and let the sauce thicken slightly. Make sure you have everything ready; that way, you’ll work faster and more neatly at the hot BBQ.

  6. Leave to rest for a moment and serve as a hearty BBQ snack. Keep a close eye on the cooking and follow the recipe step by step.
