Moinkballs are little BBQ bites made with minced meat, bacon and sauce. They’re easy to share, quickly become a hit at the table and are perfect as a snack during a long BBQ session.

Mix the minced meat with the rub and shape into evenly sized balls. Make sure to distribute the mixture evenly – take your time with this, as this is where the flavour develops.
Wrap each meatball in bacon and secure with a skewer if necessary. Make sure everything is ready beforehand; that way, you’ll work faster and more neatly at the hot barbecue.
Light the barbecue with the XCelsius BBQ lighter and set it up for indirect heat. Time to fire up the barbecue. Give it a bit of time to stabilise before you carry on.
Cook the moinkballs gently until the bacon is nicely browned and the minced meat is cooked through. Keep a close eye on them and continue cooking gently, following the recipe.
Brush the meatballs with BBQ sauce and let the sauce thicken slightly. Make sure everything is ready beforehand; that way, you’ll work faster and more neatly at the hot BBQ.
