Grilled Wild Boar Steak

Wild boar has a distinctive flavour and is ideal for a hearty barbecue. Grill the steak carefully and serve it as a robust, flavourful cut of meat.

Preparation

  1. Take the wild boar meat out of the fridge in good time and pat it dry thoroughly. If necessary, cut it into steaks of equal thickness. Take your time and get everything ready so you don’t have to rummage around when you’re at the barbecue.

  2. Light the barbecue with the XCelsius BBQ lighter and preheat it over direct heat to around 220°C. Time to fire up the barbecue. Give it a few minutes to stabilise before you carry on.

  3. Lightly rub the steaks with olive oil. Season with salt and freshly ground pepper. Make sure the seasoning is evenly distributed – take your time with this, as this is where the flavour really develops.

  4. Grill the meat briefly over a high heat. Only turn it when it comes away from the grill rack of its own accord. Keep an eye on it and turn it only when necessary, so that it browns nicely.

  5. Cook the wild boar until it reaches an internal temperature of around 60°C. Use a meat thermometer, as game can dry out quickly. Keep a close eye on the cooking process and follow the recipe carefully.

  6. Leave the meat to rest briefly, then slice it. Serve immediately. Keep a close eye on the cooking and carry on calmly following the recipe.
