Buffalo hotwings & Blue Cheese Sauce

Buffalo hot wings with blue cheese sauce combine heat and creaminess. Grill the wings, toss them in the sauce and serve them with that familiar tangy dip.

Preparation

  1. Start by making the hot sauce. Gently heat the ingredients in a pan and take the pan off the heat as soon as the sauce starts to simmer gently. Take your time and get everything ready so you don’t have to rummage around when you’re at the barbecue.

  2. Finely grind the spices for the rub and rub them thoroughly into both sides of the chicken wings. Make sure the rub is evenly distributed – take your time with this, as this is where the flavour really develops.

  3. Light the barbecue with the XCelsius BBQ lighter and set it up for indirect heat at around 110°C. Time to get the barbecue going. Give it plenty of time to stabilise before you carry on.

  4. Cook the wings gently until they are done. Then grill them briefly under a hot grill to give them some colour and a light char. Keep a close eye on them and follow the recipe carefully.

  5. In the meantime, mix the blue cheese dip and chill it. Spread everything out evenly – take your time with this, as this is where the flavour really comes together.

  6. Toss the warm wings in the hot sauce until they’re glazed. Serve straight away with the chilled dip. Take it easy and follow the steps at a leisurely pace – that way, barbecuing stays fun.
